Cracker Jack Popcorn Balls


I pretty much never go to Sam's anymore but I ran in the other day to check out some prices and I happened to stumble upon a HUGE bag of Cracker Jacks. Like double the size of a family sized bag of potato chips huge. I kid you not.


And since said giant bag of Cracker Jacks was a whopping $3.29, I clearly bought them. Yep, I was that girl in the Sam's checkout line with nothing but a massive bag of popcorn and a 32oz. Sam's soda cup. (Who can pass up a .79 cent fountain Diet Coke?)

Cracker Jacks are one of those things that I kinda forget exist when they are not in my direct line of vision. I have never said to myself, "Man, I wish I had some Cracker Jacks right now." But every time I see/have/hear about them, I remember how good they really are.


Proof: I brought this 20 cup bag of Cracker Jacks and I am pretty sure that between Justin and I we ate about 10 cups of it in 3 days. So I decided I had to make something using Cracker Jacks if for no other reason than to keep Justin from over dosing on popcorn/fiber.
 

And with the 4th of July coming up, what could be more American than Cracker Jacks? And what do you think of when you think of Cracker Jacks? Baseball. So I made Cracker Jack Popcorn Balls because baseballs are round, and white. You get where I am going right?



Don't let this strange combo freak you out. There is something magical about the intensely sweet, marshmallowy coating covering the slightly sweet, slightly crunch, molassesy Cracker Jacks.  Enough adjectives for you? It better be.

You know what makes these even better than they already are? There are only three ingredients (unless you count sprinkles as an ingredient which I don't) and you don't even have to turn your oven on. So run out to your nearest bulk warehouse retailer and buy this massive bag of Americana so you can make these too!

Cracker Jack Popcorn Balls
  • 7 cups of Cracker Jacks (or any kind of popcorn)
  • 4 tablespoons of butter (half a stick)
  • a 10oz. bag of marshmallows
  • Sprinkles if you want them
 1.) In a large bowl, microwave the butter until melted.

2.) Add the marshmallows to the same bowl and microwave for one minute. Stir and then return to the microwave for another minute.

3.) Stir again to mix marshmallows and butter together completely and then slowly stir in the Cracker Jacks.

4.) Mix until the Cracker Jacks are completely covered in the marshmallow mixture. Let cool until you can handle the mixture.

5.) Lightly coat clean hands with cooking spray and then shape the mixture into balls. Make sure to pack them together tightly so that they stay together as they cool.

6.) You can wrap them individually in plastic wrap or store them in an airtight container. They are best when eaten within 48 hours.

This week I did something I never do. I split my shopping trip into three transactions. I had a bunch of $5/$30 Winn Dixie coupons with an June 30th expiration date that I found earlier this week while cleaning out my coupon cart. I HATE it when I misplace coupons and let them expire so I was determined to try and use three if possible today. I had a huge shopping list and some high value coupons so I knew I would reach $90 before coupons so that I could use three $5/$30 coupons.

My cashier was amazing and even though I was a little flustered breaking up my transactions and using the right coupons for each, she was super patient. Gotta love when you actually get a clerk who doesn't treat you like you are breaking the law by using coupons : )

I meant to go shopping yesterday but I am so glad I never got around to it because when I got home at the end of the night I had a $25 Publix gift card waiting for me in the mail from MyBlogSpark for an upcoming blog promo I am doing in the next week. Which means that after coupons, Ibotta and my gift card I only spent $6.44 of my actual household cash budget today. Which also means that I have enough in my budget to maybe even hit up Target! Sad life I lead...

    Peanut Butter M&M Batter Bars


    I would not typically consider myself an M&M fan. I like them in desserts but I don't often eat them on their own. Except for Peanut Butter M&M's. I could eat them all day, every day all by themselves. Which is why you can only imagine the level of will power it took for me to not open the huge bag of them I bought during a sale awhile ago and devour them in minutes. I actually succeeded in saving them "to bake with".


    I think the reason Peanut Butter M&M's are my favorite is because I am obsessed with peanut butter in general. As a child, I am pretty sure I ate a peanut butter sandwich (no jelly!) every single day for lunch from kindergarten to fifth grade. Maybe longer.


    I can't tell you the last time I had a plain peanut butter sandwich for lunch but I can tell you that you need to make these Peanut Butter M&M Batter Bars ASAP. No really. They are worth turning your oven on for. And since it was close to 95 degrees on the day I made these that is saying something.


    I was thinking of making cookies/cakies using the traditional cake batter/cakie recipe and just adding some peanut butter but then I got to thinking that given how large and heavy the peanut butter M&M's are they might do better in bar form. I added  standard graham cracker crumb crust and viola! Cookie bar perfection. Or is it cake bar perfection? Who knows, and who really cares what you call them as long as they are as good as these guys are.


    And a huge thank you to my friend Meesh for suggesting to call them Batter Bars and skip all the cookie vs. cake drama all together!


    Peanut Butter M&M Batter Bars
    • 1 box of yellow cake mix (just the mix)
    • 1 cup creamy peanut butter
    • 2 eggs
    • 1/2 cup vegetable oil
    • 2 tablespoons water
    • 1 cup of Peanut Butter M&M's (more if you're feeling crazy)
    • 1 stick of unsalted butter
    • 1 cup graham cracker crumbs
    1.) Preheat the over to 350 degrees. While the oven is preheating, melt the butter in a 9x13 pan in the oven.

    2.) Once the butter is melted, sprinkle with graham cracker crumbs to make a crust of sorts.

    3.) In a large bowl, beat together the cake mix, eggs, peanut butter, oil and water.

    4.) Stir in the M&M's.

    5.) Evenly spread the batter over the graham cracker crust.

    6.) Bake at 350 degrees for 20-25 minutes or until they are firm to the touch.

    7.) Let the bars cool completely, then cut, serve and enjoy!

    8.) These went really well with cold milk and lasted in an air tight container for at least 3 days.

    Saved 58% At Target: Stocking Up On Paper Products!


    After a few weeks of very little to no shopping, it looks like this week will definitely make up for it.  I hit up Publix last Friday and I managed to get to Target yesterday. I am planning on getting back to regular Thursday Publix shopping tomorrow so it is safe to say that I will have made my way through our reserve grocery cash that I saved over the last few weeks of not spending much. Oh well, that's why I love having a cash system for groceries and household items. 

    I was so happy with yesterday's Target trip. As you can tell from the picture, I managed to stock up on tons of paper products and grab things like foil, trash bags, and sandwich bags. My Target had tons of household clearance items and luckily I had a bunch of my coupons with me so I was able to take advantage of some things that weren't on my original shopping list. 

    I was especially excited about the Colgate deal where I got toothpaste and mouth wash for .32 cents each, free soup and the Charmin toilet paper deal. Almost everything I bought was under $1 and I almost exclusively used printable coupons which is great for those of you who don't get the paper.

    A Peak In(stagram) My Offline Life: Weddings, Anniversaries, Arctic Animals, C-RV's & More!

    So you may have been wondering where I have been the last few weeks. I thought that I would give you a little play by play through the lens of my Instagram account!

    For Memorial Day weekend, Justin and I took a little trip to Sea World Orlando. We were so excited to get to experience the new Expedition Antarctica penguin exhibit which we ended up waiting in line until 11:30 at night to see (the park closes at 10:00)

    Up close and personal with the penguins. The lights were dimmed to simulate evening in Antarctica. Side note: there was no glass between me and the penguins, just a little wall.
     The next day we went back to the park in anticipation of our Wild Arctic Close Up Experience tour where we got to go behind the scenes with a group of 10 people to meet, help train and interact with arctic seals, beluga whales and a 3,000 pound walrus. It was an amazing experience and I highly recommend it anyone who wants to do a little something extra at Sea World Orlando. 

    No cameras were allowed on the tour but here is me being very excited with my ticket.
    Even though we had been to Sea World at least 5 times we had never done the Turtle Trek ride and here is a little friend from the exhibit while waiting for the ride.

     My sister got married on June 1st and in typical me fashion the only photos I actually had on my phone/instagramed where of food and drinks : )

    I had teacher workdays the Monday-Wednesday after my sister's wedding and on Wednesday afternoon Justin and I did what all sane people do and headed to the car dealership and bought a new to us 2011 C-RV. It is the closest to new car either of us has ever had and I am completely in love with it. 
     
    So excited!
     I spent my first real few days of summer by the pool reading the 5th book in the Game of Thrones series, A Dance With Dragons. It was everything I hoped it would be and I cannot believe I have to wait until 2014 for the 6th book to be published. Anyone else as obsessed as I am ?

      

    Finally, June 12th was our 3rd wedding anniversary. We were in Miami staying at my aunt and uncles while I attended iTeach Academy but since it was our anniversary we decided to jump on Priceline and spring for a hotel room for the night. Even though we paid $80 for our room with an express bid deal, Justin mentioned it was our anniversary at check in and we were upgraded to a gorgeous suite. It was quite possibly one of the nicest hotel rooms I have ever stayed in : )

    Well, I am finally back for real this time! After spending a week in Miami at the iTeach Academy for work, we are back in town to stay (I think) for at least the next 6 weeks. It will be so nice to get back on a schedule for shopping, cooking, blogging and life in general.

    Saved 66% At Publix & Stocked Up On Peanut Butter For The Year

    And I'm back! Sorry for randomly taking a week off but after a weekend out of town for Memorial Day followed by exam week at school while also kicking off four days of wedding festivities for my sister I had way too much going on to blog. 

    Now that the parties, cookouts, ceremonies and work is finally over I am getting back into reality and getting caught up on grocery shopping, laundry and life in general. I really wanted to make sure that I made it to Publix during this sale cycle for two reasons: peanut butter and Hofmann's Hot Dogs. 

    Justin is obsessed with Hofmann's which are apparently something his family loved in Upstate New York. Our Publix's just started carrying them and since they are usually pretty pricey I wanted to take advantage of the BOGO sale on them and get him two packs. 

    You may be wondering why I bought so much peanut butter. Remember last year when (on this exact day actually) I also stocked up on peanut butter for the year?  Well we went through it all and more in the past twelve months so I went ahead and took advantage of a BOGO sale and a $10 mail in rebate to get our year's supply again this week. Shopping sale cycles and having a stockpile are two of a couponer's best friends.

    I also grabbed some ice cream and oreos for some upcoming recipe posts and got some other good deals from the weekly ad and a few things we needed for the next few days of meals/lunches. I split my trip into two transactions so I could use two $5/$30 Winn Dixie coupons. Since I actually used last Thursday's grocery money for today's trip, I should have plenty left in our two week's of grocery cash for this week's sale cycle trip.
