Glazed Butter Pecan Toffee Cookies


Finally! A new recipe! Yay! You may have thought I gave up cooking and baking altogether. You may have been wondering what could have possibly kept me away for so long. You might be judging me and thinking that we have been doing nothing but eating frozen meals and fast food. And you would be partially right.

Life has been crazy. Crazier than usual. First it was Spring Break, then Easter where I cooked a lot but had time to photograph none of it. Then back to school after 10 days off with late night meetings the whole week which meant no real cooking and clearly no daylight hours for photographing food. Then came bridal showers, bachelor parties (for Justin), more meetings, lots of work events, a weekend or two of rainy weather and therefore no good photographs.


And then came this past weekend, where I woke up to rain and immediately started to panic because I had the easiest, yummiest, most amazing new cookies to share with you and I had planned on taking photos of them that morning. I imagined not getting this recipe post up. I had nightmares of my pageviews dropping and my readers being disappointed in me. And then as if on cue, the sun came out from behind the clouds and the lighting in my kitchen was sheer perfection.

And so, I bring to you these Glazed Butter Pecan Toffee Cookies. Pure cookie perfection. Buttery cookie with gooey toffee bits, rolled in pecan chips and topped with a confectioners sugar glaze. I didn't even think I liked butter pecan cookies until I tried these. That's how good they are.


I was inspired to make these at Justin's urging. He loves butter pecan ice cream. But we don't usually keep ice cream in the house. And ice cream isn't really portable. And at the fire station where they often have to run out on calls, ice cream can be a bit of a liability. So I made it into cookies.

These cookies are made even more amazing by the fact that they are made using cake mix and you basically just mix all the ingredients together and then drizzle them with a simple glaze. They saved me from my lack of cooking blogging slump and believe me, they were worth the wait.


Glazed Butter Pecan Toffee Cookies
  • 1 box of Betty Crocker Butter Pecan Cake Mix (just the mix)
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 cup toffee bits
  • 1/4 pecan chips for rolling
  • For the glaze:
    • 4 tablespoons powdered sugar
    • 1 tablespoon almond milk
    • 1 teaspoon vanilla
1.) Mix together the cake mix, eggs, vegetable oil, baking powder and toffee chips.

2.) Using a cookie scoop, scoop out a ball of dough. Roll dough ball in pecan chips or just roll the top if you prefer.

3.) Place on a lined or sprayed baking sheet at back at 350 degrees for 10 minutes.

4.) Let cookies cool completely and mix together the almond milk, powdered sugar and vanilla.

5.) Drizzle over cookies. You can enjoy them right away or let them dry and store in an air tight container for up to three days.
